I’m Loving… Yummy Summer Salads

I am always loved salads – on their own or in wraps, on rolls with hummus, with pasta or quinoa, warm or crunchy… I love it.

Summer is especially great for salads, as I can’t be arsed to make anything hot and I crave fresh cucumber, lettuce and anything else I can find in the fridge to add. Key ingredients include crunchy iceberg lettuce, cucumber, feta, raw cabbage and feta, with carrots, toasted sunflower seeds, avo, baby tomato, raw spinach, red, yellow or green peppers, naartjie, apple and various other additions adding to the mix.

Salads are especially good on the vitamin front, especially if you don’t peel any of the fresh stuff you add. If you add enough stuff to them, they’re filling, and if like me you don’t use dressing or oil, they’re great on the calorie and fat side of things.

Benefits aside, the main reason I love salads is that they taste so utterly yummy, and I love mixing different things together to get my own special salad mix. Yummy!

    I put eggs on too, although that doesn’t make it a nicoise per se… but still, I will add pretty much anything, lol.
